Tropical Traditions

Tropical Traditions has such an interesting history.  You should read about this husband and wife company here.  It’s a great story about how they sought to find the most healthy products for their family and others.  You can read more about their research on fats and oils here.

I love using organic products when cooking, and definitely try to buy organic groceries as often as financially possible.  Sometimes the organic stuff is just too expensive!   Tropical Traditions has great prices, and a wide selection of organic groceries at affordable prices.  They carry items like grass-fed beef, lots of organic groceries, household cleaners, supplements, and more.

Tropical Traditions generously sent us a 5-lb bag of Whole Wheat Pastry Flour and Brown Rice Flour to review.  I’ve been in a real baking mood lately, and this is just what I needed!

So far, I’ve made 2 things with the Whole Wheat Pastry Flour – Blueberry Oatmeal Muffins, and Chocolate Chip Oatmeal Blondies!  Yum!

For the Oatmeal Blueberry Muffins, I started with this recipe, and used half whole wheat flour, and added extra organic blueberries (they have them right now at Costco for a great price).  It was delicious right out of the oven, but tasted a little “healthy” after they cooled down.  :)

For the Chocolate Chip Oatmeal Blondies, I started with Martha Stewart’s Recipe for Chewy Oatmeal Blondies, and edited it a little.  I used less sugar, less oatmeal, used half whole wheat flour and half regular all-purpose flour, and added chocolate chips.  Fortunately, I happened to have all of the ingredients (organic) at home already so these were a snap to make.

From the interview, I learned that Tropical Traditions was one of the first companies to export Virgin Coconut Oil from the Phillipines and that his wife grew up on a coconut plantation in the Phillipines.

Here’s what I learned about coconut oil: The method that is used by Mt. Banahaw Health Products Corp. in the Philippines, whose oil is marketed exclusively by Tropical Traditions as their Gold Label standard, is the traditional fermentation method for extraction of coconut oil.

I’ve just been learning about the wonders of coconut oil and bought my first jar last week. I was told that coconut oil is better for cooking because it can handle the higher heats better than olive oil, which can begin to get rancid.

If I won I would make an Apple Coconut crips, like this one below!

Gluten-Free, Vegan Apple Crisp Recipe

Filling:
3 to 4 baking apples, peeled, cored, and sliced thin (⅛-inch thick)
2 to 4 tablespoons honey, maple syrup, or agave nectar
1 tablespoon arrowroot powder
1 tablespoon freshly squeezed lemon juice
2 teaspoons cinnamon

Topping:
1 ½ cups rolled gluten-free oats
½ cup sweet rice flour
½ to ¾ cup coconut sugar*
1 teaspoon cinnamon
¼ teaspoon sea salt
½ cup melted virgin coconut oil (or butter)*
1 teaspoon vanilla extract

Preheat oven to 375 degrees.

Place all ingredients for the filling into a 7 x 11-inch baking pan. Gently stir together with a large spoon. A good gauge for sufficient fruit is to fill your pan almost to the top with sliced fruit. It will cook down quite a bit. See the photo below.

In a small mixing bowl stir together the oats, rice flour, sugar, cinnamon, and sea salt. Add oil and vanilla and stir together with a fork. Using your hands, crumble the topping evenly over the filling.

Bake for about 40 minutes or until the juices are bubbling up and the topping is lightly browned.

*Notes: Use organic brown sugar, Sucanat, or maple sugar in the topping instead of coconut sugar if desired. Sometimes I add 1 to 2 tablespoons more oil to the topping if the mixture seems to need it.
Lemon Juice can be omitted if you are sensitive to citrus.

Italian Plum Variation: Use 4 to 5 cups pitted, halved plums in place of the apples or a combination of the two. Toss with 3 to 4 tablespoons arrowroot; increase liquid sweetener to 4 tablespoons; omit lemon juice.

I would use the coconut oil to make my favorite batch of granola:

2 cups of oats

2/3 cup shredded coconut

1/2 cup of maple syrup (I mixed maple syrup with agave)

1 tsp cinnamon

1 tsp vanilla extract

3 tbsp coconut oil (I used Tropical Traditions)

1/4 tsp salt

a dash of nutmeg and ginger

Optional: any dried fruit and nuts you want.

Mix everything together and bake at 300F for 30-45 minutes.

I would give these to my daughter to bake with. They are on a gluten free diet and do all their own baking. She does a fantastic job. Our guests don’t even know they’re eating gluten free deserts.
